1 C extra virgin olive oil
3 cloves minced garlic
1 Tbs each of basil, thyme & oregano
1/2 tsp sea salt
1/4 tsp chilli flakes (optional)
1 jar large enough to hold your mozzarella balls
Mix your herbs, salt and chilli (if using) into a jar with olive oil.
gently place your mozzarella balls into a jar (not too tightly)
Cover with flavoured oil.
Put a lid on the jar and gently turn to coat each ball well with the herbs.
Leave to marinade overnight for best results.
I make this in the morning for an evening meal or snack as the olive oil texture changes when you put it in the fridge. The mozzarella will not last outside of the fridge. If you don't have the time, make it, leave it in the fridge and remove an hour or two before use - it must all be eaten!
This will last 3-4- days in the fridge
