Loaded Fries

For the Fries

1kg potatoes or kumara, cleaned and cut into chips

Grated Cheese or Mozarella

Pinch of Celtic Sea Salt

Kimchi - Cut into cubes

 

Turn the oven on to 180C

Put the raw potatoes into the oven for 25 minutes.

When cooked, cover with cheese and bake for a further 3 minutes to melt the cheese.

Place Kimchi on top of the cheese and bake for 1 minute

For the topping sauce

3 Tbs Sweet Soy Sauce

1 Tbs Kimchi liquid

2 tsp sugar, maple syrup or agave

50g butter

1 Tbs Gochujang Paste

Put all of the ingredients into a pot and bring to the boil to reduce for a few minutes.

When the chips are out of the oven drizzle the sauce on top of the chips, cheese and kimchi.

Add a further drizzle of mayonnaise to finish off.
