Fritatta's are super easy to make and a great way to use up small amounts of food or left overs.
1 onion - sliced
2 cups of kumara or potatoes (already cooked)
1 cup of any other vegetables (already cooked)
2 cups of meat ( I usually use chicken or sausage)
salt & Pepper to taste
1/2 cup coconut cream
add any other ingredients to taste - sliced olives, anchovies, baby tomatoes - whatever takes your fancy!
Fry the onions until soft and sweet. Add to the other vegetables in an oven dish or frying pan. mix together eggs, cream, herbs and seasoning and pour over the veges. Put 1/2 cup grated cheese over (optional)
Put into a hot oven - 180 Celsius for 20-25 minutes
