Buckwheat Granola

3 ripe bananas

t Tbs honey

2 cups buckwheat (activated)

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

1 cup desiccated coconut

2 tsp cinnamon

2 tsp dried ginger

Preheat oven to 150 degrees Celcius

 

Mash bananas with honey and add to remaining ingredients

​

Spread onto a lined tray and bake for one hour until lightly browned.

​

Stir the mixture occasionally to avoid burned edges.

​

The granola will appear damp but will dry and harden as it cools.

​

Once cool add nuts and dried fruit. Place in an airtight jar.
