Watercress & Pumpkin Seed Pesto

2 1/2 Cups Pumpkin Seeds

2-3 Cups fresh Watercress (depending on how peppery you like it)

Juice of 2 large lemons

1/2 cup of Olive Oil - the best quality you can get

1 tsp Celtic Sea Salt 

Put all the ingredients into a blender and blend until you have the consistency you want.  I make mine different every time dependent on how I am feeling and what I want to add the pesto to.

My recipe is dairy free and I love the clean flavours that it offers.  Feel free to experiment with yours.
