Venison Osso Bucco

1kg  Venison Osso Bucco

Salt & pepper
2 Tbs Olive oil

Apple juice - enough to cover the meat
3 Fresh bay leaf
1 sprig Fresh rosemary
2 sprigs Fresh thyme
3 onions, Peeled

Season the venison with salt and pepper and sear in a pan.  saute onions until sweet and Place both in crock pot.  put some apple juice in the pan to de-glaze then add this and all remaining ingredients and cook for 6-7 hours on low in a crock pot - or cook in a pot in the oven at 120 degrees for 4-5 hours.  

note- if you have a bone with marrow in it and you have room in your pot - always try to include it.  The deeply nourishing minerals from the bone and marrow will enhance the flavours and properties of your dish. Bon Apetit!
