Reliable and easy to make - this recipe makes a small batch and is the recipe I demonstrated at the Kai Auckland Hui.
1.7kg tomatoes, chopped
1/2 kg apples, peeled and chopped
3 onions, chopped
1 1/2 cups sugar
2 cups malt vinegar
1 Tbsp salt
1/2 tsp black peppercorns
1/2 tsp whole allspice
1 tsp whole cloves
Put the allspice, peppercorns and cloves into a muslin bag.
Tie the bag with plain string and leave a large loop to hang around the pot handle.
In a large pot place chopped tomatoes, apples, malt vinegar and salt.
loop the muslin bag over the handle and hang in the liquid.
Gently heat the mix until the tomatoes and apples are soft.
Remove the muslin bag.
Put the tomato mixture through a mulee or a sieve to remove skins and seeds and return to the pot.
Heat again and add the sugar.
When the sugar is dissolved it is ready for bottling.
