decadent and delicious this Tiramisu is a real winner!
7 large eggs
3/4 cup caster sugar
1 cup coffee liqueur
2 cups strong espresso
60 sponge fingers
Separate the eggs. Beat the egg yolks, 1 tbs of liquor and sugar until thick and creamy. When all the sugar is dissolved, add the mascarpone and whip together until it is creamy and smooth.
Whip the egg whites until frothy then fold into the mascarpone mixture.
Mix the espresso and rest of the coffee Liquor in a bowl.
Dunk each sponge finger into the coffee solution and arrange them in a cup or large dish then top with the mascarpone mixture. Keep alternating finishing with a mascarpone layer and sprinkle with cocoa powder or grated chocolate. Refrigerate for at least a few hours before serving
