Scotch Egg

400g Sausage Meat

1/2 Minced Onion

1/2 tsp Salt

4 Hard Boiled Eggs

1 Cup Breadcrumbs

1 egg - beaten

Turn the oven on to 180C

divide the sausage meat into 4 portions and cover each egg.

dip the sausage meat into the beaten egg and then dip into the breadcrumbs.

Place on a baking tray and cook for 30-40 minutes (until the sausage meat is no longer pink)

To serve - cut in half and enjoy.  The perfect picnic food.
