Hunting the Dandelion - A Spring Fling

 

In this hands on workshop we will forage for and identify Dandelion (and note some other weeds along the way), make a Dandelion Salve, Vegan Dandelion Honey, Vinegars, Pesto, Dandelion Blosson Cake and Dandelion Flower Keto Bread.  We will also go over several recipes with both flowers and leaves for consumption and how to add dandelion to your soaps and fermented drinks.

 

Spring is the time when dandelions are abundant in nature as a tonic to help us detox our livers after winter and to aid our digetion and enhance the microbiome of our gut.  

Every part of this common weed from the roots to the blossoms is edible. It’s a good thing too, as the humble dandelion is bursting with vitamins A, B, C and D, as well as minerals such as iron, potassium and zinc.

 

The leaves boast more beta carotene than carrots and the greens provide 535% of the recommended daily value of vitamin K, which is vital for strengthening bones while the root and leaf manages cholesterol levels.
