Elderberry & Thyme Syrup

This is a cough syrup designed to encourage the release of mucous.  We take a teaspoon of this several times a day when we feel a cold coming on.  It makes us feel warm and comforted too!

As with all herbal products, please ensure that you consult with your doctor if you are on any medicines.  Do not give this to children under 12 months.

3/4 C Fresh Elderberries or 1/3 C dried Elderberries

2 Tbs dried thyme

Juice of 1 large lemon

1/2 tsp finely grated fresh Ginger

2 1/2 C filtered water

2/3 C Raw Honey

1/4 C Apple Cider Vinegar or Brandy

In a saucepan put elderberries, lemon, thyme, ginger and water.

Bring to the boil and then simmer for 10-15 minutes.

Remove from the heat and strain through a fine sieve or muslin into a heatproof bowl.

While it is still warm, add the Apple Cider Vinegar or brandy and honey and mix well.

Store it in the fridge for 6 months (with brandy) and 3-4 months with apple cider vinegar.
