Buckwheat Pancakes

1 cup buckwheat flour

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp white vinegar

pinch of salt

1 1/2 cups water

1/2 cup blueberries

small hand full of nuts

optional - 2 tsp chia seeds

coconut oil - for cooking

combine all dry ingredients with water and mix well.  

Add vinegar, blueberries and nuts and stir in gently.

ladle a small amount (approx 1/3 cup) of the mixture onto a hot pan and carefully turn over once you see bubbles forming on the top of your pancake and the edges are starting to turn up. 

These are very filling.  Serve with banana icecream
