Sourdough Bruschetta

with Whipped Goat Cheese

1 sourdough baguette

200g goat cheese

1/2 cup balsamic vinegar

1 tbs honey

1/2 tps garlic powder

1 tbs fresh chopped chives

1 tbs fresh chopped parsley

preheat the oven to 175 degrees celcius

cut up the sourdough baguette into slices and toast in the oven

Place the balsamic vinegar, honey and garlic powder into a food processor and whip until light and fluffy.  Then fold in the chives and parsley.

In a pot put the balsamic vinegar and honey and reduce until it is syrupy and thick

To serve, put the whipped goat cheese onto the bruschetta and drizzle with the balsamic reduction.

This can also be served sweet with berries and honey.

A  light and delicious addition to your menu.
