Bounty Balls

Decadent, Delicious, Dangerous and Raw.  This is my take on the Bounty Bar - but better!

1 & 1/4 cups of shredded coconut

2 Tbs Maple Syrup

2 Tbs Lemon or Lime Juice.  I use my Limoncello - cause I can!

Put 2/3 of the mixture into a blender and process until smooth.

Combine with the remaining coconut.

Roll the mixture into balls & refrigerate for 10-15 mins

In a separate Bowl melt 100g of dark chocolate and add a pinch of salt.

Roll the balls in the chocolate and put any toppings on - coconut or lavender.  Then place on to baking paper & refrigerate.

Ready to eat once the chocolate is cold - if you can wait that long.
