Kumara Gnocchi

Kumara Gnocchi

 

3 Cups Mashed Kumara

1 large Egg

1/2 tsp Salt

2 Cups Plain Flour or 1 1/2 Cups Almond Flour (add to make it firm)

 

 

Peel & Slice 2 large Kumara and boil until soft - then Mash

Measure out 3 Cups of mashed Kumara, put it in a bowl and allow to cool

Add the egg and mix in the flour and Salt.

Do not over-mix - mix just enough for all the ingredients to form a dough

Cut the dough into small portions and roll it into ropes.  

Cut into 1.5 - 2cm pieces and roll down a fork to make ridges

Allow to sit for a few minutes

Half-fill a large pot with water and salt to be as salty as the sea

Bring to a boil then reduce heat to simmer

Place the gnocchi into the pot.  When it floats to the surface, it is ready to remove with a slotted spoon.
